Easy Aubergine Curry:
Here is a simple vegan recipe for a lazy day.
2 cups of diced aubergine
1 to 2 tbsp of cooking oil
2 tsp cumin seeds
salt to taste
a pinch of turmeric ( optional)
1 tsp chilli powder or chilli flakes
a handful of fresh chopped coriander
2 tbsp of desiccated coconut
In a pan on low heat add oil. Add aubergine and mix it up to let the oil coat it. Let it cook for 5 minutes. Mix every now and then to prevent the cubes from sticking to the pan. Next add salt, cumin and turmeric and let it cook for 5 more minutes or till the cubes are tender. Add chopped coriander , coconut and chilli powder and mix. Cook for 2 minutes and turn off the heat. Let it stand for a minute. Serve hot.
