Here is a simple vegan recipe for a yummy snack. Raw, firm plantain is used.
1 plantain, peeled and cut into thin circular slices
1/2 a cup of chickpea flour
2 tbsp cornflour
2 tbsp rice flour
salt ( to taste)
1 to 2 tsp chilli powder
1 tsp cumin powder
1 tsp coriander(seed) powder
3 to 4 tbsp of oil (for shallow frying)
Boil the plantain slices in water for 5 to 6 minutes or till the slices are tender.Time taken normally depends on the type of plantain used. For a cup of slices, three to four cups of water may be used. Take the slices out onto a plate and keep them aside till they are cool. In a medium sized bowl, add flour (all the three types), salt, chilli powder, coriander powder, cumin powder and mix. Add enough water to make a moderately thick batter. Heat oil in a pan on a medium flame. Dip the plantain slices in the batter, coat them with batter on all sides and shallow fry them, flipping intermittently till both sides are crisp. They can be deep fried as well. Collect them on a plate and serve hot with your favourite dip.
