Here is a simple recipe for a dessert. Change the amount of sugar used to alter the sweetness depending on how you like it. Also, the almonds are optional. Walnuts may also be used.
3 heaped tbsp of dried coconut powder/ 4 heaped tbsp of fresh desiccated coconut.
2 heaped tbsp of rice flour
400 ml(approx.) of milk
1 tsp cardamom seeds/powder
1 cup of sugar (or more if desired)
roasted almonds (for garnish)
Mix rice flour and coconut powder in a cup. Add water to make a thick paste. Leave it for 2 to 4 hrs. Fresh, desiccated coconut may also be used in which case no soaking of coconut is necessary. After 2 to 4 hrs , start by heating milk in a heavy- bottomed pan. After about 3 minutes, add the rice flour and coconut powder mixture (soaked ). Or add fresh coconut and soaked rice flour. Keep stirring and bring it to boil. Cook for about 6 minutes on low heat. Add sugar and cardamom and keep cooking. Stir constantly to prevent it from sticking to the bottom of the pan. Cook for about 4 minutes . At this stage the pudding is thick and creamy, and ready. Garnish with roasted almonds. Serve hot or cold.
