Potato in Indian Curry Powder

Curry powder is a spicy addition to many recipes and it requires very little effort. Once made , it can be stored for upto 3 months and is used in different ways . It saves a lot of time. Here, it is used to make a simple potato curry tastier without much effort.

Curry powder:


2 tbsp cumin seeds

2 tbsp coriander seeds

1 tbsp black pepper

2 to 4 red chillies

1 tbsp mustard seeds

1 tsp fenugreek seeds

3 tbsp black lentils

a pinch of turmeric


Dry roast all the ingredients on a medium flame for 3 to 4 minutes. Turn off the heat and let it stand for about 5 minutes.Grind them to a coarse powder.Store in an airtight container.

Potato curry:


2 cups of potatoes, peeled and cut into cubes

2 tbsp of oil


1 tsp chilli powder

2 tbsp curry powder

chopped coriander or cilantro for garnish


In a pan over a medium flame, heat oil and add the potato cubes. Cover and cook for 5 minutes.

Add salt , put the lid back on and cook till the potato is tender. Add curry powder and mix. Finally, add the chilli powder and cook ( without the lid) for about 2 minutes. Garnish with chopped coriander. Serve with rice.
