spinach and black bean pasta
This is a simple vegan recipe and it is super easy to make. Canned beans or leftover beans may also be used.
3/4 cup of boiled black beans
1/2 a cup of spinach
2 cups of boiled pasta(macaroni)
1 to 2 tbsp olive oil
6 to 7 cloves of garlic(or more)
1 tsp thyme(dried)
1 tsp of parsley(dried)
1 tsp of chilli flakes ( or more)
salt ( to taste)
Heat oil in pan and add garlic. Let the garlic fry for a minute on medium heat.To this add spinach and beans and cook till the spinach is soft and appears to be cooked. Now add the pasta. Mix it all up and cook for 2 to 3 minutes. Add salt, thyme ,parsley and chilli flakes. Fresh herbs may also be used .Mix it up and cook for 2 minutes on low heat. Turn off the stove.Let it stand for a minute.Serve hot.
