This is a simple, easy pasta recipe .Heat can be adjusted by changing the amount of pepper.
2 cups of chopped pumpkin( peeled)
1 cup of pasta( penne or fusilla)
water( to boil pasta)
1-2 tbsp of olive oil
3 cloves of garlic
1 dry red chilli, cut
a pinch of freshly crushed black pepper
a pinch of cayenne pepper(optional)
salt ( to taste)
2 tbsp of chopped parsley or 1 tsp dried parsley flakes
a pinch of nutmeg powder
50 ml of milk
Boil and strain the pasta and set aside. In a deep pan on a medium heat add oil, chilli and garlic. After about a minute add pumpkin and stir. Simmer it down ,cover it and let it cook for 7 to 8 minutes or till the pumpkin is soft, stirring intermittently. Turn off the heat and let it cool. After it is cooled blend it into a puree. Add it back to the same pan on medium heat. Add pasta and milk, stir and cook for about 3 minutes. To this add salt, parsley, pepper, nutmeg and mix it all up. Cook for about 2- 3 minutes to let all the flavours blend in. Serve hot.
