Here is a simple recipe that can be made in one bowl. The heat can be adjusted and different vegetables can be added each time this is made.
1 or 2 bay leaves
2 to 3 tbsp of oliveoil
3 cloves of garlic,finely chopped
1 cup of chopped onion
3 to 4tbsp or a small bunch of chopped basil
2 cups of chopped vegetables( carrot, broccoli, red and yellow bell pepper)
1 cup of rice
water (to boil the rice)
1 to 2 tsp soy sauce
1 to 2 tsp crushed black pepper/ cayenne pepper powder
1 to 2 tbsp chilli flakes
In a deep pan, add oil and bay leaf.When the oil is fragrant, add chopped garlic and onion and saute for about 3 minutes.Add chopped basil and stir fry for about a minute on low heat.Now add chopped vegetables and saute for 3 minutes on medium heat.Add rice and mix it up with the ingredients in the pan . Add water and salt and bring it to full boil. To this add soy sauce, pepper and chilli flakes and stir. Simmer it down and cook till the rice is tender. Let it stand for 5 minutes before serving.
