Here is a simple soup that is healthy , vegan and comforting. Warning: it contains cabbage.
Ingredients:
2 cups of chopped cabbage
1 cup or 1 large chopped onion
200 ml of water or vegetable stock.
10 cloves of garlic coarsely chopped
2 inches or of more ginger finely chopped
2 tbsp olive oil ( or any cooking oil)
salt (to taste)
1 to 2 tsp cornflour.
1 or 2 tsp freshly ground pepper
1 or 2 tsp chilli flakes (optional)
cumin powder( roasted and ground cumin)
Method:
Partly boil and blend cabbage into as smooth a puree as can be. In a deep pan add oil, garlic and onion .Stir fry on a medium flame for 2 minutes.Now add half of the chopped ginger. Sauté till the onion is translucent . To this, add the boiled pureed cabbage,water (you can add the water used for boiling the cabbage) or stock and boil. Mix cornflour in 3 tbsp water without lumps and add to the above. Boil for about 5 minutes, stirring intermittently.Add salt , pepper, chilli flakes and the remaining ginger and boil for 4 to 5 minutes. Sprinkle cumin powder on top before serving. Serve hot.
