Chilli cumin pasta
Here is a simple pasta recipe that is spicy and vegan.
3 tbsp of olive oil
6 cloves of garlic
dried red chilli -2 or 3 ( or more,if it needs to be spicy),cut into 1/2 inch pieces
3 to 4 tsp cumin powder
5 to 6 basil leaves
1 cup each of chopped onion,carrots,capsicum, cauliflower or broccoli
3 to 4 ounces of pasta(fusilli,spaghetti,farfalle)
water ( to boil the pasta)
In a large pot ( large enough for 4 ounces) boil the pasta. Add a spoonful of oil and a teaspoonful of salt as it boils and stir. Strain and set aside. In a pan on a medium flame and add oil ( about 3 tbsp or less), chilli and garlic cloves and stir fry till the oil becomes fragrant. To this add onion and stir fry till the pieces are translucent.Then add the rest of the chopped vegetables and stir fry for about 3 minutes.Now add cumin powder and basil. Stir for about 3 minutes. Add salt to taste. Add the boiled pasta. Stir well. Serve hot.
